Hi
I've been doing a bit of calculating and I have come to the conclusion that the book uses far higher resistance values than necessary for a lot of the LED projects. 
Is this deliberate ?
I have followed the suggestion that 560 ohms is the way to go for the LEDs, but when I put them through Ohm's Law, I get required resistance values of under 100 Ohms.

Yes it's deliberate. 
If you're good to calculate your own values then go nuts, if you're not just follow the instructions.
